Confetti Pancakes with Vanilla Glaze
A great way to start off a birthday celebration!!
Servings: 12 medium pancakes
Ingredients
- 1 1/4 c. all-purpose flour
- 1 c. Betty Crocker Super Moist yellow cake mix
- 1 T. granulated sugar
- 3/4 tsp. baking powder
- 1 pinch salt
- 2 c. milk
- 2 lg. eggs
- 1 tsp. vanilla extract
- 1 1/2 T. assorted sprinkles
- VANILLA GLAZE:
- 1 c. confectioner's sugar
- 2 T. butter softened
- 1/2 tsp. vanilla extract
- 1-2 T. evaporated milk
- 1 tsp. assorted sprinkles
Instructions
- PANCAKES: Combine flour, cake mix, sugar, baking powder and salt in a bowl and mix. Add milk, eggs, and vanilla extract. Stir until smooth. Fold sprinkles into batter.
- Preheat a griddle/skillet to medium heat. Butter or spray griddle/skillet with cooking spray. Pour 1/4 cupfuls of batter onto griddle/skillet and cook until bubbles form on top, about 2-3 minutes. Flip and cook for 1 minute more. Serve with vanilla glaze.
- VANILLA GLAZE: Combine confectioners' sugar, butter, vanilla and milk to form glaze. You may need to add a little more milk to reach desired consistency. Stir in sprinkles. Drizzle over warm pancakes.
