Peanut Brittle
Recipe from my mother-in-law Verelene Hillis - Who can resist homemade Peanut Brittle? Sweet, crunchy, pea-nutty goodness!
Ingredients
- 1 c. light corn syrup
- 1 c. granulated sugar
- 1 T. butter
- 3/4 tsp. salt
- 1 tsp. baking soda
- 1 c. raw peanuts
Instructions
- In a large frying pan over medium heat, combine corn syrup, sugar, butter and salt. Heat until melted. Stirring constantly, add raw nuts and continue boiling until it looks golden brown. (Do not burn)
- Remove from heat, quickly stir in baking soda. Pour onto a cookie sheet and spread to desired thickness. Let cool and break into pieces.
