Tomato Cucumber Avocado Salad
A light and refreshing summer salad, tossed with cilantro-lime dressing!
Servings: 6
Ingredients
- 1 lb. roma tomatoes quartered, seeded & chopped
- 1 English cucumber cut in half & sliced
- 2 avocados diced
- 1/2 med. red onion thinly sliced
- 1/4 c. chopped cilantro (about 1/2 bunch)
- 2 T. olive oil
- Juice of 2 limes
- 1 tsp. sea salt
- 1/8 tsp. black pepper
Instructions
- In a large bowl, combine chopped tomatoes, sliced cucumber, diced avocado, sliced red onion, and chopped cilantro.
- Drizzle with olive oil and lemon juice. Season with salt & pepper. Gently toss to combine.

I make this recipe all the time, I don’t seed my Roma tomatoes, I love to dip olive oil drizzled toasted baguettes of bread in the amazing juice that forms from the seeds. You’re really missing a great treat if you make the mistake of seeding your tomatoes.
