Classic French Madeleines are a cross between a cake and a cookie. Thin and crisp on the outside with a tender crumb on the inside. Take these cookies up a notch by dipping them in melted white or dark chocolate, Enjoy!

Instructions
  1. Preheat oven to 400 degrees. Spray a Madeleine mold with non-stick spray; set aside.
  2. In a medium bowl, sift together flour, cocoa powder, espresso powder, baking powder and salt; set aside.
  3. In a large bowl, whisk together the eggs, sugar and vanilla until the mixture is thick and pale in color.
  4. Add the dry ingredients to the egg and sugar mixture, stir to combine. Add the melted butter; stir until smooth and well combined.
  5. Spoon or scoop batter into the prepared Madeleine molds. Bake for 10-12 minutes. While still hot, remove from the pan and move to a cooling rack to cool completely.
  6. Dust with confectioners’ sugar and/or dip the edges in melted white or dark chocolate.
