Turkey Sloppy Joes
Using ground turkey and whole wheat sandwich thins, provides plenty of flavor with less carbs and saturated fat, in this rendition of Sloppy Joes. Only 387 calories per serving!

Ingredients
- 1 T. olive oil
- 4 (about 2 cups) carrots coarsely grated
- 1 med. onion minced
- 1 clove garlic minced
- Coarse salt and ground pepper
- 3 T. tomato paste
- 3/4 lb. ground turkey (93% lean, dark meat)
- 1 (28 oz.) can crushed tomatoes
- 2 T. dark brown sugar
- 1 T. cider vinegar
- 1 tsp. Worcestershire sauce
- 8 whole wheat sandwich thins split and toasted
Instructions
- In a large saucepan, heat oil over medium; add carrots, onion, and garlic. Season with salt and pepper. Cook, stirring occasionally, until softened, 4 to 5 minutes.
- Add tomato paste and cook, stirring, 1 minute. Add turkey; cook, breaking up meat with a spoon, until no longer pink, 4 to 5 minutes.
- Add tomatoes, sugar, vinegar, and Worcestershire sauce. Cook, stirring occasionally, until slightly thickened, 12 to 14 minutes. Serve on toasted whole-wheat sandwich thins.
