Ingredients

olive oil

T. chopped
onion

c. uncooked
jasmine white rice

chicken broth

c.
chunky salsa
Instructions
In a large skillet over medium heat, sauté onion in olive oil, cook until tender, about 5 minutes.
Stir in rice, chicken broth, and salsa. Reduce heat, cover and simmer 15-20 minutes or until liquid has been absorbed.
Cook's Note: You can add 1 lb. lean ground beef to oil and onion, cook until no longer pink, if desired.
