Ingredients
TAQUITOS:
2c. shreddedcooked chicken breast or rotisserie chicken
1T.taco seasoning
1/4c.salsa
1/2c. shredded sharp cheddar cheese
12street-size flour tortillas
Lime wedges for serving
TOPPINGS:
Sour cream for drizzling
Cilantro leaves
Diced tomatoes
Diced avocado
DIPPERS:
Salsa
Sour cream

Instructions
Preheat the oven to 400 degrees. Line a rimmed baking sheet with foil. Lightly spray with avocado oil cooking spray; set aside.
In a large bowl, gently toss the shredded chicken, taco seasoning, salsa, and cheese until combined.
Divide the chicken mixture among the tortillas, roll them up tightly, place on the prepared baking sheet seam side down, and secure with a toothpick. Repeat with the remaining tortillas. Lightly spray the taquitos with avocado oil cooking spray.
Bake for 15-18 minutes or until crisp. Remove the toothpicks. Transfer to a serving plate and enjoy with desired toppings and dippers.
