Doritos Chicken Casserole
This delicious casserole comes together quickly. Simply pick up a rotisserie chicken from your supermarket OR use leftover chicken or turkey you have on hand, and you'll have dinner in under an hour!

Ingredients
- 3 c. shredded cooked chicken
- 2 c. shredded Mexican cheese blend (divided)
- 1 (10 oz.) can cream of chicken soup
- 1/2 c. milk
- 1/2 c. sour cream
- 1 (10 oz.) can Ro-Tel diced tomatoes with green chilies drained
- 1 T. taco seasoning mix
- 1 lg. bag Doritos your choice (I use nacho cheese)
- Chopped lettuce for garnish
- Diced tomato for garnish
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, mix together the shredded chicken, 1 cup of cheese, cream of chicken soup, milk, sour cream, Ro-Tel tomatoes, and taco seasoning mix. Stir well.
- Grease a 2-quart casserole dish. Layer half of the crushed Doritos across the bottom of the dish. Top with half of the chicken mixture. Add another layer of crushed Doritos, and then add another layer of the chicken mixture. Top with remaining 1 cup cheese.
- Cover and bake for 30-35 minutes, until bubbling hot. Remove from the oven and top with chopped lettuce, diced tomato and more crushed Doritos.

What is a large size bag of Doritos. How many ounces please? There are to many sizes.

Hi Denise, The bag sizes do vary quite a bit. An 11-oz. bag is fine, but if you want a few more to garnish the top, then go for the 16-oz. bag. Although, you may have a few left-over for snacking on! 😉

“Ro-Tel” is just a brand of diced tomatoes. Which flavor does the recipe call for? Or just leave it up to personal preference? I personally like to use a different brand (Del Monte) with jalepenos. It has no sugar added. The Ro-Tel cans I’ve looked at all have sugar added.

Hi Dan, I use the mild diced tomatoes with green chilies. If you prefer a little hotter or another brand, go for it, I’m sure it will be delicious!

Thank you! My family of picky eaters enjoyed this very much. I found that this recipe was way to chickeny for me, so I would halve the chicken and add an extra can cream of chicken soup next time around. My family, 2 adults, 2 primary school students and 1 preschooler were unable to eat even half of this. Will this casserole freeze well or should I just half it next time? Thank you.

Hi Rachael, I’m so glad your family enjoyed the casserole. If you prefer less chicken, use 2 cups instead of 3. I would NOT add more cream of chicken soup. This recipe can easily be cut in half, use an 8x8x2-inch dish. I do NOT recommend freezing, the lettuce would be wilted and the Doritos would be soggy.

Thanks, Dusty for posting this. Quick, easy, very delicious. Love this recipe – the recipe I use calls for cream cheese, as well. How can you go wrong with both? It is so good. Due to family preference, I don’t use taco seasoning, but don’t miss it. Another variation I made to this dish is – I added hash browns & corn. To my family it makes a complete meal. Of course, I added more soup & more milk to keep it creamy.

Hi…love this recipe. This is the 2nd time I used this particular Doritos Chicken Casserole recipe. There are so many variations on the casserole but this is the one I like the best. The first time I made it, I only got 2 portions for myself, my husband ate the rest in just 3 days. I was a bit upset that he ate the majority. So this time around, I will take a nice big portion to save for myself. I have raved about this dish to one of my sisters and she has made me promise that the next time I visit I will have to make this for her. It is Yummylicious!!!!!

This is a horrible recipe for the following reasons:
1. How do I cook and make shredded chicken. Had to look it up on Yahoo.
2. What is Mexican cheese blend? I just used cheddar.
3. How many oz of canned tomatoes? It says a can but cans come in diff sizes.
4. What flavor doritos do I buy? My choices at the store were flaming hot, cheese, or taco flavor so I chose taco flavor. Also, what size bag?
5. Half a pack of taco seasoning? What does that even mean? I am making 1/2 recipe so I had to do calculations
6. How many cups of chopped lettuce and chopped tomatoes?
This is a disaster. These are not ingredients I normally buy but I made it for hubby.

I am so sorry you feel this way. This is one of my most shared recipes.
1. Use a rotisserie chicken from the supermarket or use leftover chicken you have on hand and shred it with two forks.
2. Mexican cheese blend can be found in the Deli or Dairy department.
3. RoTel diced tomatoes only come in a 10 ounce can, but I will revise the recipe to reflect that.
4. Your choice of Doritos (I use Nacho Cheese).
5. There is 2 tablespoons of taco seasoning in a packet. I will revise to say 1 tablespoon.
6. Shredded lettuce and diced tomatoes are garnishes, so use as much or as little as you like.

Thank you for replying. I made it for hubby and he ate almost half of the whole casserole (I made half recipe) so I guess the recipe is pretty much fool proof and it must have tasted good. I have never made anything like this before. I cooked some thin sliced chicken breasts in the crockpot with some chicken broth while I went to the store and bought the other ingredients. And I forgot and used up all my cheese in the mixture, so I had to use 4 American cheese slices on top. And the lettuce and tomato topping looked very pretty. Very colorful dish. Would make again.
