"Add one pound of ground beef to make this a one dish meal."
- 2 T. olive oil
- 2 T. chopped onion
- 1 1/2 c. uncooked jasmine white rice
- 2 c. chicken broth
- 1 c. chunky salsa
- In a large skillet over medium heat, sauté onion in olive oil, cook until tender, about 5 minutes.
- Stir in rice, chicken broth, and salsa. Reduce heat, cover and simmer 15-20 minutes or until liquid has been absorbed.
- Cook's Note: You can add 1 lb. lean ground beef to oil and onion, cook until no longer pink, if desired.
