Chocolate Coconut Haystacks

Chocolate Coconut Haystacks

These easy homemade treats are loaded with soft, chewy coconut, sweetened chocolate, and chopped pecans. Trust me, these candies will disappear quickly!!
Course: Dessert
Cuisine: American
Servings: 4 dozen candies

Ingredients

  • 2 (1 oz.) squares unsweetened chocolate chopped
  • 1 (14 oz.) can sweetened condensed milk
  • 1/2 lb. shredded coconut (about 2½ cups)
  • 1/2 c. chopped walnuts or pecans

Instructions

  • Preheat oven to 350 degrees. Grease or line a baking sheet with parchment paper.
  • Melt chocolate over double boiler. Stir in the rest of the ingredients.
  • Drop by teaspoonfuls onto a prepared baking sheet.
  • Place in heated oven and TURN OFF the heat. Leave haystacks in the oven for 15-20 minutes or until the haystacks have a glazed appearance.

    Hi I’m Kati. My mom passed away and didn’t write here recipes down. I have been searching for her stuff. I have mastered her Chicken and Dumplings, Mac and Cheese, and attempting her Beef stroganoff this weekend. Now, What she called Chocolate macaroons, the rest of the world calls Haystacks, lol. Either way, Yours so far is the closest I have found. She didn’t use any nuts, But she used bakers chocolate (a lot more than 2 squares), condensed milk, , coconut, and I want to say powdered sugar in them. They were dark chocolate and more of a cookie texture in the center on the thicker ones.
    Sorry, I just really want these cookies back in my life. Shes been gone since 2012. I miss the cookies.

      Hi Kati,
      I’m so sorry you lost your mom. I love that you are recreating her recipes! I lost my mom in 2006. My mom cooked the same way, she never wrote anything down. I think I have a handful of recipes she actually wrote down, each one a treasure. I too use Baker’s chocolate. Did your mom add oatmeal to them? That might be the texture you’re looking for.     What are they supposed to turn out like ? Do they harden up or stay gooey, greasy balls ?
    How do I store them?

      Hi Stephanie, They should hold their shape like in the picture. I would store them in an airtight container in the refrigerator.
