Homemade Frango Mint Chocolates
Recipe by our grandma Dorothy - A deliciously smooth and creamy mint chocolate truffle made famous by the Fredrick & Nelson department stores here in the Pacific Northwest, Enjoy!
Servings: 64 pieces
Ingredients
- 1 (12 oz.) pkg. semi-sweet chocolate chips
- 1/2 c. margarine or butter
- 1 1/2 c. confectioner's sugar sifted
- 2 lg. eggs
- 2 tsp. vanilla extract
- 1 tsp. peppermint extract
Instructions
- Melt chocolate chips in a double boiler over simmering water, stirring occasionally as the chocolate melts.
- In a large bowl, cream together margarine, sugar and eggs. Add melted chocolate, beating until the mixture is smooth, then add vanilla and peppermint.
- Drop by the spoonful onto waxed or parchment paper lined baking sheets OR pour into a greased and parchment paper lined 8-inch square pan. Cool in the refrigerator until set.
- To slice into small squares, use a warm damp cloth to clean the knife in between slices for a cleaner cut. Store the mints in and air tight container in the refrigerator or freezer.

I have a concern about the eggs in this recipe. The eggs are not cooked, and with the salmonella-egg scares over the years this is a BIG concern.

No worries, the melted chocolate cooks the eggs, but just to be safe, use pasteurized eggs. ~ Dusty

You can also use 1/2 cup egg substitute, since it is pasteurized.

I am looking forward to making this recipe, but I have a question. My mom used to work at Frederick & Nelson decades ago, & when she first started, she helped make the frangos before she went to another department. After she retired from there, she told us that the one ingredient that made these chocolates different from others was the fact that they used Droste cocoa from Holland. I notice that this isn’t listed as part of the recipe. Has this been updated? I’m still going to try this, thanks!

Hi Valerie, I have fond memories of going to Fredrick & Nelson to see Santa and buying Frangos at Aurora Village during the holidays. To answer your question, this is my Grandmother’s handwritten recipe and sadly she has passed, so I can’t ask her. How cool that your mom actually got to make these for the store. Are you going to drop them or make them into squares? Let me know how they turn out and if you find the recipe that includes Droste Cocoa.

I’m not sure yet, but when I do make them, I’ll probably cut them into squares. Will also let you know if I find the Droste cocoa recipe, sadly my mom has also passed.
