Lori’s Lemon Drop

For fun garnish with sour lemonhead candies.

Ingredients

  • 1 lemon wedge
  • granulated sugar for glass rim
  • Ice
  • 2 1/2 oz. citrus vodka
  • 3/4 oz. fresh lemon juice
  • 1/2 oz. simple syrup
  • 1/2 oz. lemonade
  • 1/4 oz. triple sec
  • 1 lemon twist

Instructions

  • Moisten the outer rim of a martini glass with the lemon wedge and coat lightly with sugar.
  • Fill a cocktail shaker with ice. Add all of the remaining ingredients and shake well. Strain into the martini glass.
  • Garnish with a lemon twist.

"Cool and refreshing!!"

Ingredients

  • 1 1/2 c. fresh lime juice
  • 1/2 c. fresh lemon juice
  • 6 c. water
  • 1 c. superfine sugar

Instructions

  • In a full bottomed pitcher combine the lime juice and lemon juice with the water and sugar.
  • Serve over ice in a glass with a sugared rim and garnish with a lime wedge.

Leprechaun Fizz

"It's sweet, it's refreshing and it's GREEN!"

Ingredients

  • Lime sherbet
  • Lemon-lime soda or ginger ale
  • Lime slices for garnish

Instructions

  • Put a scoop of sherbet in a tall glass and top it off with soda. Garnish glass with a lime slice, if desired.
  • Cook's Note: Let the kids stir the drink until it turns into a lovely shade of Leprechaun green and enjoy!

Jamocha Shake

"A combination of chocolate, coffee and vanilla ice cream, makes this thick and creamy shake irresistible!"

Servings: 2

Ingredients

  • 1 c. cold strong brewed coffee
  • 1 c. low-fat milk
  • 3 T. sugar
  • 3 c. Vanilla ice cream
  • 3 T. chocolate syrup

Instructions

  • Combine the coffee, milk, and sugar in blender and mix on medium speed for 15 seconds to dissolve sugar.
  • Add ice cream and chocolate syrup, blend on high speed until smooth and creamy.
  • Pour into two 16 oz glasses. Top with whipped cream and drizzle with more chocolate syrup, if desired.

Irish Coffee

Irish Coffee

The perfect after-dinner beverage!
Course: Beverage
Cuisine: Irish
Servings: 4

Ingredients

  • 8 tsp. granulated sugar divided
  • 1/2 c. whiskey divided
  • 2 c. hot brewed coffee divided
  • 1/2 c. heavy cream lightly beaten to form soft peaks

Instructions

  • Pour 2 teaspoons of sugar and 2 tablespoons of whiskey into each mug. Fill with coffee, stir to dissolve sugar.
  • Carefully pour the cream over the back of a spoon, held just above the surface of the coffee, allowing the cream to float on top of the coffee without mixing.
  • Garnish with green sprinkles or chocolate shavings if desired.

Iced Mocha Granita

Iced Mocha Granita

Ingredients

  • 1/3 c. cold strong brewed coffee
  • 1/3 c. whole milk
  • 1 T. chocolate syrup
  • 2 tsp. sugar
  • 1 c. ice cubes

Instructions

  • In blender, combine coffee, milk, chocolate syrup, sugar, and ice. Blend until mixture is smooth and ice is completely and finely crushed.
  • Pour into tall glass and serve immediately.
  • Cook's Note: Drizzle chocolate syrup in the glass(es) before adding the mocha granita. Top with whipped cream and dust with cocoa powder if desired.

Hot Orange Cider

"Take the chill off with this delicious twist on hot cider."

Ingredients

  • 1 (12 oz.) can frozen orange juice concentrate
  • 1 1/2 quarts apple cider
  • 1 orange cut into thin slices
  • 6 cinnamon sticks for garnish

Instructions

  • Prepare orange juice as directed on can.
  • Heat orange juice and apple cider together. Bring to a boil over low heat.
  • Pour about 1 cup orange cider into each mug. (Stir in 2 teaspoons rum if desired.) Top with an orange slice and garnish with a cinnamon stick.

Hot Buttered Rum Batter

Hot Buttered Rum Batter

Warm up with our sweet & spicy Hot Buttered Rum!
Course: Beverage

Ingredients

  • 1 lb. butter room temperature
  • 1 lb. brown sugar
  • 1 lb. confectioners' sugar
  • 2 tsp. ground nutmeg
  • 2 tsp. ground cinnamon
  • 1 quart vanilla ice cream softened
  • whipped cream for serving

Instructions

  • Batter: In a large bowl, using a hand mixer cream together the butter, brown sugar, confectioners’ sugar, and spices. Add the ice cream, beat until well combined. Store the batter in an airtight container in the freezer until ready to use.
  • To make Hot Buttered Rum Drink: Place 2 heaping tablespoons of batter into a mug, add a shot of rum, and 6 ounces of boiling water. Stir to combine. Top with whipped cream and a sprinkle of cinnamon or nutmeg if desired. Enjoy!

Notes

This recipe can easily be cut in half.

Homemade Shamrock Shakes

Homemade Shamrock Shakes

A delicious homemade version of a very famous mint-flavored milkshake!
Course: Beverage
Cuisine: Irish
Servings: 2

Ingredients

  • 2 c. vanilla ice cream
  • 1 c. milk
  • 1/4 c. half and half
  • 1/4 tsp. mint extract (not peppermint)
  • 8 drops green food coloring

Instructions

  • Mix all ingredients In a blender on high speed until smooth. Stop blender, stir and blend again, if necessary to combine.
  • Pour into two glasses with sugared rims. Top with whipped cream, sprinkles and a cherry, enjoy!

Homemade Bailey’s & Cream

"It‘s hard to tell the difference between Bailey’s Liquor and my mom’s homemade version."

Ingredients

  • 3 eggs slightly beaten
  • 1/4 tsp. coconut extract
  • 2 tsp. instant coffee dissolved in a ¼ cup water
  • 1 c. rum or whiskey
  • 1 can Eagle’s brand sweetened condensed milk
  • 1 pint half and half

Instructions

  • In a blender, combine all ingredients except the half & half, cover and blend for 30 seconds. Add the half & half, blend until smooth.
  • Serve over ice or keep refrigerated until ready to serve.

Hard Lemonade

Hard Lemonade

There's nothin' like homemade lemonade on a hot summer day to quench your thirst. For a kid-friendly version, omit alcohol.
Course: Beverage
Cuisine: American
Servings: 5

Ingredients

  • 2 c. water
  • 1 c. granulated sugar
  • 8 c. ice cubes
  • 1/2 c. vodka
  • 1 c. fresh squeezed lemon juice
  • 1 lemon sliced into rings

Instructions

  • In a small saucepan, bring water and sugar to a boil, simmer until sugar dissolves (about 3 minutes). Remove from heat, cool completely.
  • Fill a large pitcher with ice. Stir in simple syrup, vodka, lemon juice and lemon slices. Serve immediately.

Green Punch

Great punch for Halloween, Christmas, St. Patrick's Day, and Seahawks Sunday, because of its beautiful bright green color! Check out our party ideas below!
Course: Beverage

Ingredients

  • 2 quarts cold water
  • 2 (.13 oz.) pkg. unsweetened lemon-lime Kool-Aid
  • 1 c. granulated sugar
  • 1 (46 oz.) can pineapple juice chilled
  • 1 (12 oz.) frozen lemonade concentrate thawed
  • 1 quart ginger ale chilled

Instructions

  • Pour 2 quarts of cold water into a 1-gallon punch bowl or container.
  • Add Kool-Aid and sugar, stir until the sugar is dissolved.
  • Add the pineapple juice and lemonade concentrate, stir well. Refrigerate until ready to serve.
  • Just before serving, add the ginger ale. Ladle the punch into glasses filled with ice and enjoy.

Notes

***PARTY IDEAS***
  • HALLOWEEN SWAMP WATER: Fill a large metal or plastic bowl or tub, halfway with hot water and 1 lb. of dry ice; set a smaller punch bowl on top. (Make sure the area is well-ventilated.) Float gummy worms, fish, eyeballs, bugs, etc., on top of the punch.
  • CHRISTMAS: Freeze cranberries in ice cubes or make a frozen fruit ring to float on top.
  • SAINT PATRICK'S DAY: Float kiwi slices and or mint leaves.
  • SUMMER PUNCH: Float lemon, lime, or orange slices on top.
  • BABY & BRIDAL SHOWERS: Float 1 quart of lime sherbet on top, it changes the color to a beautiful pastel green.
  • SEAHAWKS GAME: Float fresh blueberries and lime slices.

This drink was very popular in the 80’s.

Ingredients

  • 1 1/2 oz. peach schnapps
  • 4 oz. orange juice

Instructions

  • Pour peach schnapps into a lowball glass filled with ice. Top with orange juice, stir well.
  • To make a HAIRY NAVEL: add 1 ounce vodka.

Frozen Piña Coladas

A cold, refreshing, blended cocktail with fresh pineapple, coconut, cherries, and rum! For a kid-friendly version, simply omit the alcohol. P.S. Don’t forget the umbrellas!

Ingredients

  • 4 c. ice cubes
  • 1 c. pineapple juice chilled
  • 1/2 c. golden rum
  • 1/2 c. cream of coconut
  • Fresh pineapple wedges for garnish
  • maraschino cherries for garnish

Instructions

  • In blender, combine ice, juice, rum, and cream of coconut, and blend until mixture is smooth and frothy.
  • Pour into glasses. Garnish with a fresh pineapple wedge and maraschino cherries. Don’t forget the umbrellas!
  • Cook's Note: For a kid friendly version, simply omit the alcohol.

Frozen Hot Chocolate

Frozen Hot Chocolate

Frozen Hot Chocolate

"Share with someone you love."
Course: Beverage

Ingredients

  • 3 oz. good quality chocolate
  • 2 tsp. hot chocolate mix
  • 1 1/2 T. sugar
  • 1 1/2 c. milk
  • 3 c. Ice
  • Whipped cream for garnish
  • Chocolate shavings for garnish

Instructions

  • Chop the chocolate into small pieces and melt in a small heavy saucepan or in the top of a double boiler over simmering water. Stir occasionally until melted. Add the hot chocolate mix and sugar, stirring constantly until blended. Remove from heat and slowly add 1/2 cup of the milk, stirring until smooth. Cool to room temperature.
  • In a blender, place the remaining 1 cup of milk, the chocolate mixture, and the ice. Blend on high speed until smooth and the consistency of a frozen daiquiri.
  • Pour into a giant goblet. Top with whipped cream and chocolate shavings. Garnish with a cherry and two straws.

Salted Caramel Cocoa

Salted Caramel Cocoa

Salted Caramel Cocoa

Hot cocoa topped with sweetened whipped cream, caramel drizzle and a mixture of turbinado sugar and sea salt.
Course: Beverage
Cuisine: American
Servings: 1

Ingredients

  • 1 c. hot cocoa prepared (we made Caleb's Hot Cocoa recipe)
  • 3 T. caramel sauce divided
  • Whipped cream
  • 1 pinch coarse sea salt for sprinkling
  • 1 pinch Turbinado sugar for sprinkling
  • Candy corns for decoration, optional

Instructions

  • Coat the inside of a mug with 2 tablespoons of caramel syrup.
  • Add the hot cocoa and gently stir to combine.
  • Top with whipped cream, drizzle with remaining caramel sauce and sprinkle with sea salt and turbinado sugar.
  • Cook's Note: To make a festive Halloween drink, decorate with candy corns.

Gingersnap Hot Chocolate

Hot cocoa with ginger and spice, and everything nice!

Ingredients

  • 1 c. hot chocolate prepared
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground allspice
  • 1/4 tsp. ground cinnamon
  • Whipped cream
  • Gingersnap cookies

Instructions

  • Add ginger, allspice and cinnamon to hot chocolate, stir well.
  • Top with whipped cream and sprinkle with crushed gingersnap cookies.
  • Place a small soft gingersnap on the rim, if desired.

Ingredients

  • 1 c. hot chocolate prepared
  • 1 T. canned pumpkin
  • 1 tsp. brown sugar
  • Whipped cream
  • cinnamon
  • crushed graham crackers

Instructions

  • Add canned pumpkin and brown sugar to hot chocolate. Stir until dissolved.
  • Add a swirl of whip cream and top with cinnamon, sprinkles or crushed graham crackers.
